Ingredients

Mixture A - Udon Noodles

Cap Bintang Green Bean Starch 80g
Cap 3 Kambing Glutinous Rice Flour 40g
All-purpose flour 80g
Salt 8g
Water 110g
A large pot of water for boiling noodles 1 litre

Mixture B - Broth

Water 1 litre
Bonito flakes 10g
Dashi powder 10g
Shoyu 10g
Sugar 10g
A pinch of salt

Garnishin - Optional

Abura-age (Japanese sweet tofu skin/pouch)
Yuzu rind
Spring onion
Wasabi
